-4 medium beets - scrubbed, trimmed, and halved
-10 oz. mixed baby salad greens
-2 tbsp extra-virgin olive oil
-2 tsp aged balsamic vinegar
-3 oz goat cheese
1. Place beets in saucepan, cover with water, and bring to a boil. Cook for 20-30 minutes. Drain, cool, and cut eetsinto cubes.
2. To make the dressing, whisk together balsamic vinegar and olive oil in a small bowl.
3. Place large portion of baby greens onto each salate plate, followed by beets. Top with goat cheese and a drizzle of the dressing.
